"I am writing this letter to acknowledge the fine work that Northwest Mist did
installing our humidification system for our barrel aging cellar.
The first year of operation of our new winery we had no humidity control in our cellar,
and consequently we were topping barrels every month in the summer and every two months
during the winter. We have over 500 barrels in inventory so this was also a considerable
amount of labor. In addition to the labor costs we also used over 600 gallons of wine for
topping in the first year.
To control our topping losses we hired Northwest Mist to install a misting system for
our barrel cellar. We found their bid to be very reasonable and the work was done quickly.
Since it was installed the humidity inn our cellar has been a constant 70% and the system
has preformed flawlessly. We immediately noticed the decrease in our topping necessary for
our barrels. The system has been in place almost a year and so far we have lost less than
180 gallons of wine. In addition to our savings in wine loss we only have to top every two
and half months now, saving us labor costs as well."
