Fogging systems in winery barrel rooms are emerging as an
effective way for maintaining constant higher humidity levels, thus reducing evaporation
losses, while aging and fermenting wine in oak barrels.
Wineries are discovering that clouding the barrel room with
a light layer of fog equalizes vapor pressure on either side of the barrel wall, greatly
reducing the amount of wine lost to the heavens.
Wineries report the systems can pay for themselves within a
year and wine savings and topping off cost. Small water and electrical cost savings can be
realized.
